Named for the 36 copper stills used at The Macallan’s new distillery, one of the world’s most celebrated luxury spirit brands, The ThirtySix Bar & Co is a Cocktail Bar + Contemporary Izakaya experience destination that will whisk cocktail lovers away on a whirlwind voyage of discovery that traces the lineage of the iconic Highball.

Atmosphere:

Eclectic yet chic, the cocktail bar’s interiors were inspired by the carriages of a luxury train and offer the perfect setting for aficionados of boutique spirits to indulge their passion. Arriving guests are welcomed by a spectacular glass-​encased display that tells the journey of whisky as it matures in the cask. Beyond, the main bar space is defined by an elegant cocktail bar in brass-accented tile; deep-set leather booths with marble table tops; and pullman-style couches bound with leather and set beneath vintage-esque carriage shelves. For guests who would like to create their own whisky cocktail, The Vault offers fine and rare spirits by both the bottle and the dram, allowing for unprecedented access to some of the world’s most sought-after whiskies.

Drinks:

With a collection of fine and rare premium spirits, The ThirtySix Bar & Co ’s drink menu features both classic cocktails given a modern twist aka ‘The Riff Collection’, and a series of elevated Japanese-style Highballs – These include classics like the Hojicha Mizuwara, Nikka from the Barrel Japanese Whisky (awarded 2019 World Best Blended Whisky ), Hojicha tea, Black Lemon Bitters, House Soda; and modern takes like the 21st Century California, which has the flavour of Mexico, smoky, sweet and bitter to the palate, thanks to the use of Montelobos Joven, an Organic Mezcal paired with a 70% dark chocolate.

The Riff Collection is our variation on classic cocktails, taking the drink into a new delicious direction for today’s palate: New Martinez, a take on the Martinez, the father of Martini cocktail (created in 1870, California –  USA), is a combination of  London Dry Gin, Vermouth Secco, Luxardo Maraschino, House Absinthe Bitters.

Or try the B for Mayor’s Boilermaker, with Rebel Yell Small Batch Reserve Bourbon (awarded 2018 Gold The American Whisky Masters), Becherovka Herbal Czech Liqueur, Fresh Lemon Juice, Thyme Syrup, Beer Foam.

Food:

On the food side, the bar team have worked with the culinary team to create a menu that’s not only packed with brilliant flavours, but also pairs perfectly with the bar’s intriguing cocktails, perfect for cooling off after hectic day at work. The ThirtySix Bar & Co’s vibrant sharing-style food menu is infused with flavours sourced from around the world, and presented in the style of Izakaya where dishes are served on small plates and skewers fresh from the charcoal grill.

Highlights of the ThirtySix Bar & Co’s food menu include a great selection of chargrilled skewers, such as ‘Gyutan’ ox tongue; Spanish pork belly kimchi rolls; chicken wings ‘Tebamoto’ in Yakiniku; crunchy chicken ‘Nankotsu’ soft bone; Cuttlefish with Korean citron sauce;  and Scallops in pesto.

Other soul-soothing sharing items include the “Hotaru-Ika” firefly squid in soy sauce with wasabi cheese; chicken crackling with salted egg, and Tiger prawn flambé rolled with chicken skin.

For something more substantial, guests can choose from the Old-Fashioned Bourbon Burger, inspired by the iconic cocktail, with Bourbon flambé Australian ground beef, burnt orange cherry mustard, and bitters-infused sesame seeds; or the Brandy Blue Cheese Burger with Australian ground beef, blue cheese, fig marmalade and balsamic onion.

Vegetarian lovers will also rejoice, as there are plenty of vegetarian items to satiate any craving, from savoury Edamame Kiritanpo served with wasabi-seaweed mayo; to rice crackers with Veggies mocktail mousseline; succulent Fried tofu in wasabi and tomato sauce.
